Today was the first day of my internship at Jean Pierre's Bakery. It went better than I thought it was going to be. I'm happy to say that I didn't drop or break anything except one cookie that slipped out of my hand.
I arrived at Jean Pierre's at 6:00 am this morning to see how the whole process works. They usually start around 4:00 am to 4:30 am. But I arrived at 6:00 in the morning, so I wasn't able to get the full experience of the process. For now I'm going to be in the bakery observing how they make certain pastries and bread. Soon I will be doing more hands on things then I will be going from the bakery to Jean Pierre's Restaurant to see how everything flows all together.
Today I learned how to make a big batch of bread. Each dough for the bread had to be between 12 to 13 pounds. I made about 8 rolls total usually you have to make about 7 rolls of dough total. But if something were to happen to one of the doughs then we would have extra to use instead of rushing to make another batch.
I also helped pack tons of cookies in four boxes. This was a special order that they were working on and the cookies were finished baking once I started my internship. After packing all those cookies we had to put them into plastic containers like the ones you get with your cookies when you buy them. I got to put the rest of the cookies into the small containers that took up two trays. When we were done with that I learned how to use a certain machine for the packaging. I thought we were done with the cookies until we had to put Jean Pierre's stickers on the packages. Then we were finally done.
The bakers there are fast paced but I caught on quick. They had to have certain pastries done at a certain time because Jean Pierre would load up his van and take the pastries and bread back to his restaurant I came in when they were finishing up and loading his van. But since Mother's Day is coming soon they are going to be busy. We already have some special orders for this weekend and I'm really excited to do more.
